Smoked Pork Cabbage And Potato Casserole
|Yellow onion||1 Medium, finely chopped|
|Vegetable oil||1 Tablespoon|
|Cabbage||1 Pound, coarsely shredded|
|Caraway seeds||1 Teaspoon|
|All purpose potatoes||1 Pound, peeled and cut into 1-inch cubes|
|Basic chicken stock/Canned chicken broth||1⁄4 Cup (4 tbs)|
|Boneless smoked pork butt||1 Pound, sliced 3/4 inch thick|
|Black pepper||1⁄4 Teaspoon|
Mix the onion and oil in an ungreased shallow 3-quart microwave-safe casserole.
Cover with the lid, and microwave on High until glassy about 3 minutes.
Mix in the cabbage and caraway seeds, then arrange the potatoes around the edge of the casserole.
Pour in the stock, cover, and micro wave on High for 12 minutes, stirring midway.
Scoop out half the cabbage.
Arrange the pork in a single layer over the cabbage in the casserole, then spread the scooped-out cabbage on top.
Cover and microwave on High for 5 minutes.
Give the casserole a half-turn, reduce the power to Medium High, and microwave for another 5 minutes.
Remove from the oven and let stand, covered, for 5 minutes.
Sprinkle with the salt and pepper.
