Stuffed Green Pepper Casserole

Ingredients
  Bacon slices 3 , diced
  Ground beef chuck 1⁄2 Pound
  Diced onion 1⁄2 Cup (8 tbs)
  Diced celery 1⁄2 Cup (8 tbs)
  Chili powder 1⁄2 Teaspoon
  Salt 1⁄2 Teaspoon
  Ground pepper 1 Dash
  Rice 1⁄4 Cup (4 tbs)
  Canned tomatoes 2 Cup (32 tbs)
  Water 1⁄2 Cup (8 tbs)
  Green peppers 4 Large
Directions

Cook bacon until crisp.
Remove bacon, reserve.
Brown beef, onion and celery in bacon fat.
Add chili powder, salt, pepper, rice and tomatoes and bring to a boil.
Cut off stem end of peppers and remove seeds.
Wash.
Fill pepper shells with beef mixture and place in a buttered casserole.
If there is too much filling, spoon around the peppers in the casserole.
Add water to casserole.
Cover and bake in a 350° F.oven for 30 minutes.
Uncover and sprinkle with crisp bacon and bake 15 minutes longer.
