Cabbage Beef Casserole
|Ground beef||1 Pound|
|Onions||2 Medium, diced|
|Head green cabbage||1 Medium, coarsely sliced|
|Carrots||2 Medium, thinly sliced|
|Regular long grain rice||3⁄4 Cup (12 tbs)|
|Water||1⁄2 Cup (8 tbs)|
1. In 5-quart Dutch oven or saucepot over high heat, cook ground beef and onions until pan juices evaporate and meat is well browned, stirring occasionally. Remove from heat. Add cabbage, carrots, and salt; toss to mix well.
2. Pour rice into 3-quart casserole; spoon beef mixture on top; pour beef broth and water over mixture. Cover; bake in 350°F. oven 1 hour.
