Organic Golden Rice Casserole can serve as a great main dish or side dish, especially with enchiladas. This Organic Golden Rice Casserole is one which is near and dear to my heart. Well worth your effort!
  Lemon 1 , juiced
  Organic white basmati rice 480 Milliliter, cooked (2 Cups)
  Turmeric 1⁄2 Teaspoon (3 Milliliter)
  Steamed vegetables 480 Milliliter (2 Cups, Any Combination Of Peas, Onions, Broccoli, Cauliflower, Zucchini, Carrots Or Mushrooms)
  Plain non-fat yogurt 8 Ounce (240 Gram)
  Toasted cashews 120 Milliliter (Whole Or In Pieces, 1/2 Cup)
  Raisins 120 Milliliter (1/2 Cup)

Preheat oven to 350°F (180°C).
Combine lemon juice, rice and turmeric.
Spread half of the rice in a buttered casserole dish.
Layer with half the vegetables then follow with half the yogurt, cashews and raisins.
Repeat and place in oven for about 30 minutes or until heated through.
