Baked Apple & Sweet Potato Casserole
|Butter||2 Tablespoon, divided|
|Orange juice||1⁄2 Cup (8 tbs)|
|Packed dark brown sugar||1⁄4 Cup (4 tbs)|
|Ground cinnamon||1⁄8 Teaspoon|
|Ground allspice||1⁄8 Teaspoon|
|Rum||1⁄4 Cup (4 tbs)|
Preheat oven to 350°F Boil or steam potatoes until tender.
Remove skin and cut lengthwise into slices.
Peel and core apples; slice into rings.
Grease 9 x 6 inch baking dish with 1 tablespoon butter; alternate potato and apple layers until dish is filled.
Pour combined orange juice, sugar, spices, rum and remaining 1 tablespoon butter, melted, over potato mixture.
Bake 30 minutes or until potatoes are brown and shiny and liquid is absorbed.
