Brown 2 lbs sausage (I use a HOT sausage). Set aside.
Beat together 6 eggs, 2 cups milk, and 1 teaspoon dry mustard. Set aside.
Cube 1 small round of Sourdough Bread, and line bottom of 9 x 13 casserole dish with cubes.
Layer cooked sausage over cubed bread.
Top with 2 cups shredded cheese (low-fat tastes just as good!).
Pour egg mixture evenly over the top.
