Cornbread With Corn Casserole

How to make moist and delicious cornbread with corn casserole. Great side dish!
Ingredients
  Eggs 2 , beaten
  Whole kernel corn 14 Ounce, undrained (1 can)
  Cream-style corn 14 Ounce (1 can)
  Sugar 1 Tablespoon
  Melted margarine 1⁄4 Cup (4 tbs)
  Jiffy cornbread mix 8 1⁄2 Ounce (1 box)
Directions

GETTING READY:
1)Preheat over to 375 degrees.
2)Spray an 8x8 casserole dish with non-stick cooking spray.

MAKING:
3)In a mixing bowl mix together eggs, whole kernel corn and cream-style corn, mix until well combined.
4)Add sugar, margarine and Jiffy mix and mix well.
5)Pour the mixture into prepared casserole dish and bake for approximately 1 hour.

SERVING:
6)Cut into slices and serve with your favorite recipes and refrigerate any leftovers.

I have heard of cornbread and cornbread casseroles of being great with beef stews. we don't have beef, so what else does it go with nicely?? corn definitely is good for health! :)

Hi tanya3286! Hope you've been well! I hope you can try this recipe. It turns out so moist since you don't drain the corn. This goes great with chili, bean soup or even green beans and ham. Hey Usefireandrescue..my husband doesnt take eggs though i would love to feed him this..is there anything else i can substitute it with or can i avoid it completely???

Hi ifoodiee! Hope you are doing great! You could use Egg Beaters as a substitute, but if your husband is allergic, that won't work. I have substituted eggs with applesauce before, but not in a baked product, so I'm not sure how the consistency would turn out. I've also seen a banana used in place of 1 egg. Sadly, I haven't tried any subs with this particular recipe. It would definitely be a trial and error to see what works. This is a great recipe though... very moist and delicious! I can eat this on a plate all by itself with butter! LOL, shame on me! If you experiment with this recipe, please let me know how it turns out. I'm really curious about it. I usually use egg beaters in recipes a lot and love it. So I think it should work. I hope you can try this recipe. It's really moist and delicious. I can eat this all by itself!
