Mixed Bean And Ham Casserole

Ingredients
  Onion 4 Ounce, minced
  Garlic 1 Clove (5 gm), minced
  Tomato juice 1 Cup (16 tbs)
  Cooked and drained dried beans and peas 10 Ounce
  Cooked ham/Pork 6 Ounce, diced
  Water/Beef bouillon 1⁄2 Cup (8 tbs)
  Vinegar 1 Tablespoon
  Soy sauce 1 Teaspoon
  Dry mustard 1⁄2 Teaspoon
  Brown sugar replacement 1⁄2 Teaspoon
Directions

In uncovered flameproof oven-to-table casserole, cook onion and garlic in tomato juice, at high heat, until tomato juice is reduced by half.
Add remaining ingredients, bring to boil, stir gently then let simmer covered for 15 minutes or freeze: defrost; bake covered at 350° for 30 minutes before serving.
