Penny-Wise Chicken Casserole
|Cabbage head||1 Small, cut in 1 1/2 inch wedges|
|Caraway seed||1 Teaspoon|
|Red tart apples||4 Small, cored and cut in 1/2 inch rings|
|Brown sugar||2 Tablespoon|
|Broiler fryer||2 1⁄2 Pound, cut up (1 Piece)|
|Cider vinegar||1⁄2 Cup (8 tbs)|
|Butter/Margarine||2 Tablespoon, melted|
1. Arrange cabbage on bottom of a 2-quart shallow casserole; sprinkle with 1 teaspoon flour and the caraway seed.
2. Top with apple rings; sprinkle with a mixture of brown sugar and 1 teaspoon flour.
3. Arrange chicken pieces, skin side up, on top of cabbage-apple mixture. Pour a mixture of the vinegar and salt over chicken; pour melted butter evenly over chicken; cover casserole.
4. Bake at 350Â°F 45 minutes. Remove cover; bake 30 minutes or until chicken is browned and tender.
