Pea And Carrot Croquettes

Ingredients
  Carrots 1 Cup (16 tbs), mashed and cooked
  Peas 1 Cup (16 tbs) (Cooked)
  Parsley 1 Teaspoon, minced
  White sauce 1 Cup (16 tbs)
  Melted butter 1 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

MAKING
1.In a bowl, combine carrots, peas, parsley, white sauce and butter, being careful not to mash peas
2.Season, cool and shape into croquettes
3.Now roll in crumbs, then in egg and again in crumbs
4.Last, fry in hot deep fat (380 F.) 3 to 5 minutes
SERVING
5.Serve with a sauce of your choice or with salads
