Ingredients
  Carrots 2 Pound, peeled
  Onion 1 Small, finely chopped
  Mayonnaise 3⁄4 Cup (12 tbs)
  Sugar 1 Tablespoon
  Shredded sharp cheddar cheese 1 1⁄2 Cup (24 tbs)
  Butter/Margarine 1⁄2 Cup (8 tbs), melted (About 1 Stick)
  Butter crackers 38 , crushed (About 1 Sleeve)
Directions

Simmer the carrots in water to cover for 18 minutes or until barely tender.
Cool and slice.
Combine the carrots, onion, mayonnaise, sugar and cheese in a bowl; mix well.
Spread the carrot mixture in a 9x13inch baking dish.
Combine the butter and crackers in a small bowl; mix well.
Sprinkle the carrot mixture with the butter mixture.
Bake at 350 degrees for 20 to 25 minutes.
