Savory Carrot Bake
|Carrots||2 Pound, peeled|
|Onion||1 Small, finely chopped|
|Mayonnaise||3⁄4 Cup (12 tbs)|
|Shredded sharp cheddar cheese||1 1⁄2 Cup (24 tbs)|
|Butter/Margarine||1⁄2 Cup (8 tbs), melted (About 1 Stick)|
|Butter crackers||38 , crushed (About 1 Sleeve)|
Simmer the carrots in water to cover for 18 minutes or until barely tender.
Cool and slice.
Combine the carrots, onion, mayonnaise, sugar and cheese in a bowl; mix well.
Spread the carrot mixture in a 9x13inch baking dish.
Combine the butter and crackers in a small bowl; mix well.
Sprinkle the carrot mixture with the butter mixture.
Bake at 350 degrees for 20 to 25 minutes.
