Honey Glazed Carrots
|Carrots||2 Cup (32 tbs), sliced|
|Honey||1 1⁄2 Tablespoon|
|Ground nutmeg||1⁄8 Teaspoon|
|Freshly ground black pepper||1⁄8 Teaspoon|
In medium saucepan combine carrots, honey and salt.
Add just enough cold water to cover carrots.
Bring to a boil over medium to high heat.
Boil vigorously, stirring occasionally, until the liquid has nearly evaporated.
Reduce heat to medium.
Stir carrot mixture until coated with glaze.
Remove from heat.
Add nutmeg and pepper to pan and mix well.
