Glazed Carrot Coins

Ingredients
  Water 1⁄4 Cup (4 tbs)
  Salt 1⁄4 Teaspoon
  Carrots 3 Medium, thinly sliced
  Butter/Margarine 1 1⁄2 Tablespoon
  Firmly packed brown sugar 1⁄3 Cup (5.33 tbs)
  Grated lemon rind 1 Tablespoon
Directions

Combine water, salt and carrots in 1-quart casserole.
Cover tightly with plastic wrap.
Microwave 5 minutes on HIGH, or until carrots are tender-crisp.
Stir in butter, sugar and lemon rind.
Cover.
Microwave 4 minutes on HIGH, or until hot and glazed.
