Gingered Carrots And Onions
|Baby carrots/6 medium carrots cut into thin strips||1 Pound|
|Frozen onions||16 Ounce|
|Brown sugar||3 Tablespoon|
|Ground ginger||1⁄4 Teaspoon|
|Chopped toasted pecans||1⁄4 Cup (4 tbs)|
Cut an 18x18-inch piece of heavy foil.
Place carrots and onions in center of foil.
Combine butter, brown sugar, salt, and ginger.
Pour over carrots and onions.
Bring up opposite edges of foil and, leaving a little space for expansion of steam, tightly seal top, then each end.
Place foil packet in center of the cooking grill.
Grill 35 to 45 minutes or till the vegetables are tender.
Remove from grill.
Sprinkle vegetables with pecans, if desired.
Serve with a slotted spoon.
