1) Peel the large carrots and slice them.
2) Scrub the baby ones.
3) In a heavy saucepan, place the carrots and add water to cover.
4) Bring to the boil, reduce heat, cover, and simmer until nearly tender.
5) Remove cover, stir in the butter and sugar, bring back to the boil, and boil steadily until glazed, being careful not to burn.
6) Serve the glazed carrots as side dish.
