|Carrots||8 Medium, peeled and cut lengthwise into quarters|
|Boiling water||1⁄2 Cup (8 tbs)|
|Mayonnaise/Salad dressing||3 Tablespoon|
|Light cream||2 Tablespoon|
1. In a large bowl mix the mayonnaise and cream and keep it aside for later use.
2. In a saucepan pour the boiling water and put the carrots and salt, cover and cook for 15 minutes or until the carrots are tender but firm.
3. Drain the excess water and mix with the creamy dressing.
4. Serve hot as a side dish with roasts or grills or with kid-€™s lunch.
