Honey Glazed Carrots
|Carrots||1 Pound, thickly sliced on the diagonal|
|Defatted chicken stock||1 Cup (16 tbs)|
|Dijon mustard||1 Tablespoon|
1) In a large frying pan, combine the carrots, chicken stock, honey and mustard together.
2) Cover and cook over a medium heat for 10 minutes, or until the carrots are tender.
3) Uncover and cook over a medium-high heat, stirring frequently for 5 minutes, or until the chicken stock is reduced to a glaze.
4) Serve the Honey Glazed Carrots immediately on a platter.
