Carrot Coins With Spinach
|Spinach||10 Ounce (1 Package, 300 Gram)|
Trim and wash spinach.
Place in 12-cup (3 L) casserole with just the water clinging to leaves.
Peel and slice carrots diagonally into coins; add to casserole.
Using vegetable peeler, remove 4 strips of lemon rind; add to casserole.
Cover and microwave at High for 5 to 7 minutes or until spinach has wilted and carrots are tender-crisp.
Squeeze 1 tbsp (15 mL) juice from lemon into small bowl; add butter and microwave at High for 30 to 60 seconds or until melted.
Pour over vegetables.
Season with salt and pepper to taste.
