|Orange juice||1⁄4 Cup (4 tbs)|
1)Cut carrots in 1 inch thick slices.
2)Take a saucepan and add carrots slices, salt and enough water.
3)Cover the pan and cook for about 20 minutes or until tender. Drain.
4)In a small saucepan, mix sugar, cornstarch, salt and ginger and then add orange juice well.
5)Cook the mixture until thickened and bubbly. Continue to cook for 1 minute.
6)Add butter to the mixture and pour it hot carrots. Toss to coat evenly.
7)Serve sunshine carrots hot with meal of your choice.
