Ginger Minted Carrots

Ingredients
  Frozen baby carrots/About 2 pounds fresh baby carrots (peeled) /about 2 pounds large carrots (peeled and cut into 1/2 by 3-inch sticks) 30 Ounce (3 Packages, 10 Ounce Each)
  Orange juice 1 Cup (16 tbs)
  Grated fresh ginger 1 Teaspoon
  Chopped fresh mint 1 Tablespoon
  Salt 1 Dash
  Pepper 1 Dash
Directions

In a pan, combine carrots, orange juice, ginger, salt, and pepper.
Cover and bring to a boil; then reduce heat and simmer frozen carrots about 3 minutes, fresh carrots about 7 minutes, or until fork tender.
Put carrots and their liquid in a bowl or container.
Cover and chill at least 6 hours or as long as 1 week.
To serve, drain carrots and spoon into a bowl; garnish with mint.
Serve with wooden picks.
