Ginger Minted Carrots
|Frozen baby carrots/About 2 pounds fresh baby carrots (peeled) /about 2 pounds large carrots (peeled and cut into 1/2 by 3-inch sticks)||30 Ounce (3 Packages, 10 Ounce Each)|
|Orange juice||1 Cup (16 tbs)|
|Grated fresh ginger||1 Teaspoon|
|Chopped fresh mint||1 Tablespoon|
In a pan, combine carrots, orange juice, ginger, salt, and pepper.
Cover and bring to a boil; then reduce heat and simmer frozen carrots about 3 minutes, fresh carrots about 7 minutes, or until fork tender.
Put carrots and their liquid in a bowl or container.
Cover and chill at least 6 hours or as long as 1 week.
To serve, drain carrots and spoon into a bowl; garnish with mint.
Serve with wooden picks.
