Golden Carrot Casserole
|Eggs||4 , beaten|
|Carrots||2 1⁄2 Cup (40 tbs), grated|
|Salt||1 1⁄2 Teaspoon|
|Milk||1 1⁄2 Cup (24 tbs)|
|Onion||1 Tablespoon, grated|
|Whole wheat bread crumbs||1 Cup (16 tbs)|
|Cheddar cheese||1 Cup (16 tbs), grated|
|Mushroom soup||1 Can (10 oz), heated|
|Parsley||1 Tablespoon, chopped|
1) In a large mixing bowl, add all the ingredients and blend well, spoon into a well greased casserole.
2) Place the casserole in a shallow pan of hot water and bake in the oven at 350 Deg F for about 30 min, until brown; pour over the mushroom soup into the casserole.
3) Garnish with chopped parsely and serve immediately.
