|Grated orange rind||1⁄4 Teaspoon|
Wash and lightly scrape carrots.
Cover with small amount of water and salt.
Cook covered until tender.
When tender, most of the water should have evaporated.
Combine honey or sugar with margarine and orange rind in a heavy skillet.
Bring to a boil.
Add carrots and simmer about 10 minutes.
Serves 4 to 6.
