1) In a bowl, combine flour, salt and pepper. Keep aside.
2) Cut the carrot in diagonal slices and put in the flour mixture to coat evenly.
3) In a fry pan, heat up oil and place carrots to fry over medium heat. Sear the carrots and cook till they are brown.
4) Add yoghurt to stir in.
5) In a warm plate, serve the carrots by garnishing with mint, caraway seeds and pomegranate seeds, if available.
