Carrot Saute fry

Carrot Saute fry is colourful, tasty and gives a sweet+chilly flavour. Very easy to make quickly.
Ingredients
  Carrot 1⁄2 Kilogram, grated (4 large sized)
  Onion 1 , finely chopped
  Green chilly 2 , slit lengthwise
  Urad dal 3 Teaspoon
  Mustard seeds 2 Teaspoon
  Turmeric powder 1 Teaspoon
  Grated coconut/Coconut powder 4 Teaspoon
  Oil 3 Teaspoon
  Salt To Taste
Directions

1. Heat Oil in kadai, add the urad dal and mustard, let the dal turn light brown and the mustard splatter.
2. Now add chopped onion, green chilly, curry leaves and saute till the onions turn transparent.
3. Add the grated carrot, turmeric powder, salt and saute for 2min, cover and cook for 5-8mins.
4. Uncover and saute, add grated coconut and saute for a min.
5. Carrot saute fry is ready. Enjoy!!
