Orange Zest Carrots
|Tender young carrots||8|
|Green onions and tops||4 (With 2 Inches Of Tops)|
|Shredded orange peel||1 Tablespoon|
Scrape carrots lightly and shred on coarse side of grater.
Chop onions and cook gently without browning in heavy saucepan in the melted butter.
When onions are soft, stir in carrots, orange peel, sugar and salt.
Stir until everything is shiny with butter.
Cover pan tightly and cook over very low heat until carrots are crisply tender, 5 to 8 minutes.
Shake pan frequently to keep carrots from sticking.
