Tasty Marinated Carrots
|Carrots||1 1⁄2 Pound, sliced|
|Broth||2 Tablespoon (Either Homemade Or Canned)|
|Olive oil||2 Teaspoon|
|Garlic||2 Clove (10 gm), peeled and cut in half|
|Granulated sugar||1 1⁄2 Teaspoon|
|White pepper||1⁄8 Teaspoon|
|Fresh watercress||1⁄2 Cup (8 tbs), chopped|
In a steamer or medium saucepan steam carrots with a small amount of water until tender-crisp; drain.
In a medium bowl combine broth, vinegar, oil, garlic, sugar, salt and white pepper; mix well.
Add watercress and carrots; mix well.
Marinate in refrigerator for several hours to overnight.
Serve chilled or reheat gently to serve hot.
