Maple Butter Carrots
|Carrot||3 Cup (48 tbs), frozen, sliced|
|Maple syrup||1⁄4 Cup (4 tbs)|
|Lemon juice||1 Teaspoon|
Conventional method: In saucepan, bring small amount of water to boil; add carrots. Reduce heat to simmer and cook for 8 minutes or until tender; drain.
In saucepan, melt butter over medium heat. Stir in maple syrup, lemon juice and salt; bring to boil. Pour over carrots.
Microwave method: In microwaveable dish, cover and microwave carrots and 2 tbsp (25 ml) water at High for 9 minutes. Let stand for 2 minutes; drain.
In 2-cup (500 ml) measure, microwave butter at High for 1 minute. Stir in maple syrup, lemon juice and salt; microwave until boiling. Pour over carrots.Toss to mix.
Garnish with parsley.
