Spring Peas And Carrots

Ingredients
  Sugar snap peas/Snow peas / chinese pea pods 2 Cup (32 tbs), stem ends and strings removed
  Thinly sliced carrots 1 Cup (16 tbs)
  Apple juice 1⁄2 Cup (8 tbs) (no sugar added)
  Reduced calorie tub margarine 2 Teaspoon
Directions

1. In 1-quart microwavable casserole combine first 3 ingredients. Cover and microwave on High (100%) for 5 minutes, until tender-crisp.
2. Add margarine and stir to combine; microwave, uncovered, on High for 3 minutes. Let stand 1 minute.
3. To serve, transfer to serving platter and garnish with mint sprigs.
