Easy Gingered Carrots
|Carrots||2 Pound, scraped|
|Ginger||1⁄2 Teaspoon, ground|
|Orange juice||1⁄2 Cup (8 tbs)|
Cut carrots diagonally into 1/4-inch slices.
Cook carrot slices, covered, in a large saucepan in boiling water to cover 10 minutes or until tender.
Set aside, and keep warm.
Combine sugar and next 3 ingredients in a small saucepan; gradually stir in orange juice.
Bring to a boil over medium heat, stirring constantly; cook, stirring constantly, 1 minute.
Remove from heat; add butter, stirring until butter melts.
Pour mixture over carrot slices, tossing to coat.
Transfer mixture to a serving dish, and sprinkle with chopped fresh parsley, if desired.
