Carrots In Orange Butter
|New carrots||2 Pound, scrubbed / scrapped|
|Brown sugar||4 Tablespoon|
|Oranges||2 , grated rind and juice|
|Orange slices||4 (For Garnish)|
Cook the carrots in boiling salted water for 10 minutes until just tender but still crisp. Drain well. Return the carrots to the saucepan and stir in the butter, sugar and orange rind and juice. Heat gently to dissolve the sugar and melt the butter, then bring to the boil and simmer gently for 5 minutes. Turn into a warmed serving dish and garnish with orange slices.
