Pureed Carrots

Ingredients
  Carrots 2 Pound, washed, trimmed, and cut into 1/4-inch rounds
  Salt 1⁄2 Teaspoon
  Sweet butter 6 Tablespoon, cut into 1/4-inch cubes
  Ground ginger 2 Teaspoon
  Half and half 1⁄4 Cup (4 tbs), heated
Directions

Place carrots in a saucepan with salt and enough water to cover; bring to a boil, then reduce heat and cook until tender, about 20 minutes.
Drain carrots and place in work bowl of food processor fitted with a steel knife, or in a blender.
Add butter and ginger and process until smooth.
Gradually add half and half, and process 1 minute longer.
Serve immediately, or place in top half of double boiler over hot water to keep warm.
