Minted Peas And Carrots
|Water||3 Cup (48 tbs)|
|Shelled green peas||1 3⁄4 Pound (Fresh Ones, 2 Cups)|
|Diced carrot||3⁄4 Cup (12 tbs)|
|Sliced fresh mushrooms||1 1⁄2 Cup (24 tbs)|
|Chopped green onions||1⁄4 Cup (4 tbs)|
|Minced fresh mint||1 Tablespoon|
Bring 3 cups water to a boil in a medium saucepan.
Add peas and carrot; cook 10 minutes or until tender.
Drain; set aside.
Melt margarine in pan over medium heat.
Add mushrooms and green onions; saute 2 minutes.
Add pea mixture, mint, and salt; saute 2 minutes.
