Carrots Marinated In Mustard

Ingredients
  Dijon mustard 3 Tablespoon
  Red wine vinegar 3 Tablespoon
  Olive oil 1⁄4 Cup (4 tbs) (Preferably Extra-Virgin)
  Large carrots 1 Pound, peeled and cut into matchstick
  Genoa salami/Other cured meat 8 Ounce (Thinly Sliced Hard Variety)
  Chopped parsley 1 Tablespoon (For Garnish)
  Chopped fresh parsley 1 Tablespoon (Garnish)
Directions

1. In a large bowl, combine mustard and vinegar. Whisk to blend. Gradually whisk in olive oil. Add carrots and toss to coat with dressing. Marinate at room temperature, tossing occasionally, 2 hours.
