Salmon On A Bed Of Leeks And Carrots

Ingredients
  Olive oil 2 Teaspoon
  Leeks 2 Large, julienned
  Carrots 3 , julienned
  Salt 1 1⁄4 Teaspoon
  Black pepper 1 1⁄4 Teaspoon
  Vermouth/White wine 3 Tablespoon
  Salmon fillets 24 Ounce (4 Pieces, 6 Ounces Each)
Directions

1. Heat a large nonstick skillet over medium heat and add the oil. When the oil is hot, add the leeks and carrots and cook for about 15 minutes, or until the carrots are al dente. Stir occasionally.
2. Add salt, pepper, vermouth or wine, and salmon fillets. Cover and cook for about 10-12 minutes
