Glazed Carrots And Pineapple
|Carrots||1 Pound, pared and cut into julienne strips|
|Canned unsweetened pineapple chunks||20 Ounce, drained, reserve 1/4 cup juice (1 Can)|
|Packed dark brown sugar||1⁄4 Cup (4 tbs)|
|Cold water||2 Tablespoon|
|Cornstarch||1 1⁄2 Teaspoon|
1. Put carrot strips into an 8-inch square glass baking dish. Mix reserved pineapple juice, brown sugar and salt. Pour over carrots. Cover with plastic wrap. Cook in microwave oven 5 minutes at High.
2. Add pineapple to carrots; mix well. Cook covered in microwave oven 10 to 15 minutes at High, or until carrots are tender; stir 3 times.
3. Mix cold water and cornstarch until smooth. Stir into carrot mixture. Cook uncovered in microwave oven 3 minutes at High, or until thickened; stir once.
