Carrots Glazed With Orange And Ginger
|Unsalted margarine||1 Tablespoon|
|Orange juice||3⁄4 Cup (12 tbs)|
|Minced fresh ginger/1 teaspoon ground ginger||1 1⁄2 Tablespoon|
|Orange peel strip||3 (Each About 2 Inches Long And 1/2 Inch Wide)|
|Carrots||8 Medium, peeled and sliced 1/2 inch thick|
Melt the margarine in a medium size heavy saucepan, add the orange juice, ginger, and orange peel, and bring to a boil.
Add the carrots and adjust the heat so that the orange juice bubbles gently.
Simmer, uncovered, until all the liquid has evaporated and the carrots are tender and nicely glazed 10 to 12 minutes.
