Carrots Glazed With Orange And Ginger

carrots glazed with orange and ginger is a fruited carrots recipe. Spiced with a hint of zippy ginger, the carrots can be served with rice or on the side with meals of choice as an extra addition for lunch or dinner!
Ingredients
  Unsalted margarine 1 Tablespoon
  Orange juice 3⁄4 Cup (12 tbs)
  Minced fresh ginger/1 teaspoon ground ginger 1 1⁄2 Tablespoon
  Orange peel strip 3 (Each About 2 Inches Long And 1/2 Inch Wide)
  Carrots 8 Medium, peeled and sliced 1/2 inch thick
Directions

Melt the margarine in a medium size heavy saucepan, add the orange juice, ginger, and orange peel, and bring to a boil.
Add the carrots and adjust the heat so that the orange juice bubbles gently.
Simmer, uncovered, until all the liquid has evaporated and the carrots are tender and nicely glazed 10 to 12 minutes.
