Snow Peas With Carrots And Red Pepper
|Non-stick cooking spray||2 Tablespoon|
|Unsalted margarine||1 Tablespoon|
|Carrots||2 Medium, peeled and cut into matchstick strips|
|Sweet red pepper||1 Medium, cored, seeded, and cut into matchstick strips|
|Sugar snap peas/Snow peas||3⁄4 Pound, trimmed and strings removed|
|Grated lemon rind||1⁄4 Teaspoon|
|Lemon juice||1 Teaspoon|
|Black pepper||1⁄8 Teaspoon|
Coat a heavy 10 inch skillet with the cooking spray; add the margarine and melt over moderate heat.
Add the carrots and red pepper and cook, covered, for 3 minutes.
Add the snow peas, cover, and cook 3 minutes longer or until the vegetables are tender.
Stir in the lemon rind, lemon juice, and black pepper, and serve.
