Ginger-Minted Carrots

Ingredients
  Frozen baby carrots 30 Ounce (Three 10 Ounce Package)
  Orange juice 1 Cup (16 tbs)
  Grated ginger 1 Teaspoon
  Chopped mint 1 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

Combine carrots, orange juice, ginger, salt, and pepper in pan.
Cover and bring to boil; simmer until carrots are just tender, about 3 minutes.
Chill carrots, covered in liquid.
Drain and spoon into serving bowl; garnish carrots with mint.
