Nippy Carrot Nibblers

Ingredients
  Carrots 1 Pound
  Salad oil 3 Tablespoon
  Garlic 3 Clove (15 gm), minced
  Coarsely chopped onion 1 Tablespoon
  Vinegar 1 Cup (16 tbs)
  Salt 1 1⁄2 Teaspoon
  Dry mustard 1⁄2 Teaspoon
  Cucumber pickling spices 1 Tablespoon
  Pepper 1⁄8 Teaspoon
  Onion 1 , thinly sliced
Directions

Out and pare whole carrots into lengthwise slices 1/4" thick; then into strips 3" long.
In salad oil in skillet, saute garlic and chopped onion until almost tender (5 minutes).
Stir in vinegar, spices and carrots.
Simmer covered 5 minutes.
Carrots should be crunchy and crisp.
Transfer carrots to shallow dish, top with thinly-sliced onion and cover and refrigerate until needed.
