Caribbean Ham Dinner
|Ham slice||2 Pound (1 1/2 inches thick)|
|Canned pineapple chunks in juice||1 Pound (1 can)|
|Maple syrup||1⁄2 Cup (8 tbs)|
|Canned sweet potatoes||29 Ounce (1 can)|
Score fat that rings ham.
Sear in a heavy serving dish or skillet.
Combine pineapple chunks, juice, maple syrup, allspice and pepper and pour over ham.
Cover and simmer for 30 minutes or until ham is cooked and tender.
During last 10 minutes of cooking place sweet potatoes around ham and baste with juices.
Serve in skillet when potatoes are heated through.
