Caribbean Fruit Dessert
|Canned unsweetened sliced peaches||16 Ounce|
|Unsweetened white grape juice||1⁄2 Cup (8 tbs)|
|Grated lime rind||2 Teaspoon|
|Lime juice||2 Tablespoon|
|Vanilla low fat yogurt||1⁄4 Cup (4 tbs)|
|Shredded coconut||2 Tablespoon|
Peel bananas; cut in half crosswise, and slice each half lengthwise, and set aside.
Drain peaches, reserving1/2 cup juice.
Combine reserved juice, peaches, and next 3 ingredients in a skillet.
Bring to a boil and reduce heat.
Add bananas to peach mixture; cook over medium-low heat 3 minutes or just until bananas are thoroughly heated.
Spoon fruit mixture into 4 serving dishes; top each with 1 tablespoon yogurt and 1/2 tablespoon coconut.
Garnish with lime slices.
