Caribbean Jerk Seasoning Rub

People immediately think "Hit Spicy" when they think Jamaican jerk rub. That's not always the case, most chefs pride themselves on a flavorful jerk spice mix with very little heat. Too many hot peppers mask all of the other flavors... So we give you this jerk rub with no peppers try it out and add the heat later if you need it.

Ingredients

Brown sugar 2 Tablespoon
Salt 2 1/2 Teaspoon ((12 ml))
Allspice 2 Teaspoon
Cayenne pepper 1 Teaspoon
Fresh ground black pepper 1 Teaspoon
Onion powder 1 Teaspoon
Ground cinnamon 1/2 Teaspoon ((2 ml))
Garlic powder 1/2 Teaspoon ((2 ml))
Ground cumin 1/4 Teaspoon ((1 ml))
Dried thyme 1/4 Teaspoon ((1 ml))

Directions

MAKING

1. In an airtight container, combine brown sugar, salt, allspice, cayenne pepper, black pepper, onion powder, ground cinnamon, garlic powder, ground cumin, and dried thyme.

2. Mix well and store in a cool, dark place. Use within three months.

SERVING

3. Season chicken, pork or fish with rub, grill over indirect heat, low and slow with a little smoke and serve hot!
