1.Cut away visible fat from pork.
2.Take a flat glass pan and place pork in it.
3.In a small bowl, combine, pepper, ginger, garlic, cayenne pepper, brown sugar, cilantro, corainder and nutmeg.
4. Mix well to form a thick paste.
5. Smear the pork with the paste and wrap tightly.
6.Place in refrigerator for 1 to 2 hours.
7. Coat grill with spray and preheat for 5 minutes.
8.Grill pork for 6 to 8 minutes.
9. Cut across the grain and slice pork thinly.
10. Serve warm.
