Caribbean Yam Bake
|Mashed cooked yams||2 Pound (3 Cups)|
|Packed brown sugar||1⁄2 Cup (8 tbs)|
|Margarine||1⁄4 Cup (4 tbs), melted|
|Dark rum||2 Tablespoon|
|Ground nutmeg||1⁄2 Teaspoon|
|Lime||1 (Use Zest And Juice)|
|Bananas||2 , peeled, diced (Dole)|
1. In a large bowl, mix mashed yams with eggs, brown sugar, margarine, rum (if used), nutmeg, lime zest and juice until thoroughly mixed.
2. Fold in diced bananas and turn into shallow greased 5-cup baking dish.
3. Let it bake in 375°F oven 40 minutes.
