Jamaican Coconut Pie

Ingredients
  Angel flake coconut 1 1⁄3 Cup (21.33 tbs) (Baker'S)
  9 inch pie shell 1 (Unbaked)
  Butter/Margarine 3 Tablespoon
  Sugar 1⁄2 Cup (8 tbs)
  Eggs 3
  Dark corn syrup 1 Cup (16 tbs)
  Salt 1⁄8 Teaspoon
  Ground cinnamon 1 Teaspoon
  Ground nutmeg 1 Teaspoon
  Vanilla 1 Teaspoon
  Dark rum 2 Tablespoon
Directions

Sprinkle coconut in pie shell.
Cream butter; gradually beat in sugar.
Add eggs and beat well.
Blend in remaining ingredients.
Pour over coconut in pie shell.
Bake at 350° for 50 minutes or until slightly puffed on top.
Cool to room temperature.
