Hot Jamaican Jerk Chicken
|Onion||1 Small, chopped|
|Garlic||2 Clove (10 gm), crushed|
|Jerk seasoning||1 Tablespoon (Or To Taste)|
Rinse chicken and pat dry.
Rub with lemon.
Mix onion, garlic, allspice and salt in small bowl.
Rub over chicken; sprinkle with jerk seasoning.
Marinate in shallow baking dish in refrigerator for 2 hours or longer.
Preheat oven to 325 degrees or preheat grill.
Bake for 1 1/2 to 2 hours or grill until tender, basting with marinade; do not overcook.
Serve with seasoned rice, fried plantain and green salad.
