Crayfish In Court Bouillon

Ingredients
  Crayfish 40
  White wine 2 Cup (32 tbs)
  Water 2 Cup (32 tbs)
  Onion 1 , chopped
  Carrot 1 , sliced
  Bay leaf 1
  Garlic 2 Clove (10 gm)
  Parsley sprigs 2
  Salt To Taste
  Pepper To Taste
Directions

Wash crayfish in several waters.
Mix next 7 ingredients and simmer, covered, for 30 minutes.
Add crayfish and simmer for 12 minutes.
Serve very hot, garnished with parsley.
