Surullitos De Maiz
|Water||2 Cup (32 tbs)|
|Salt||1 1⁄4 Teaspoon|
|Cornmeal||1 1⁄2 Cup (24 tbs)|
|Grated edam cheese||1 Cup (16 tbs), packed|
Combine water and salt in a saucepan; heat to boiling.
Add cornmeal and mix thoroughly.
Cook over moderate heat for about 5 minutes, or until mixture separates from bottom and sides of pan.
Remove from heat.
Add grated cheese and mix well.
Take mixture by teaspoonfuls and shape into balls.
In the palms of the hands roll balls to 1/2 inch thickness, in the shape of small cigars.
Fry in deep hot fat (370°F.on a frying thermometer) for 2 to 3 minutes, or until golden brown.
Drain on absorbent paper.
