Ingredients
  Fish bones and heads 2 Pound
  Water 3 Quart
  Dry wine 4 Cup (64 tbs) (red or white)
  Bouquet garni 1 (thyme, parsley and 1/2 medium onion)
  Celery stalks with leaves 2
  Onion 1 , stuck with 2 cloves
  Carrots 2 , cut into pieces
  Salt 1 Tablespoon
Directions

Simmer, covered, the fish bones and heads in 2 quarts of the water for 20 minutes.
Strain.
Add remaining water and other ingredients to broth.
Simmer, covered, for 20 more minutes.
Add fish and cook according to recipe.
