|Fish bones and heads||2 Pound|
|Dry wine||4 Cup (64 tbs) (red or white)|
|Bouquet garni||1 (thyme, parsley and 1/2 medium onion)|
|Celery stalks with leaves||2|
|Onion||1 , stuck with 2 cloves|
|Carrots||2 , cut into pieces|
Simmer, covered, the fish bones and heads in 2 quarts of the water for 20 minutes.
Add remaining water and other ingredients to broth.
Simmer, covered, for 20 more minutes.
Add fish and cook according to recipe.
