Grilled Jamaican Jerk Chicken

Stephen Linn visits with Chef Lynne Vea and learns why this classic Caribbean dish is the perfect way to add some spice to your tailgate party - especially paired with a Lynne's Tropical Fruit Salsa.
Ingredients
  Olive oil 1⁄4 Cup (4 tbs)
  Garlic 3 Clove (15 gm), coarsely chopped
  Onion 1 Small, coarsely chopped
  Jalapeno pepper 1 , seeded and chopped
  Ginger 1 Tablespoon, grated or minced
  Brown sugar/Molasses 1 Tablespoon
  Dried thyme 1 Tablespoon
  Ground cinnamon 1⁄4 Teaspoon
  Ground nutmeg 1⁄4 Teaspoon
  Ground cloves 1 Pinch
  Ground allspice 1 Teaspoon
  Freshly ground black pepper 1⁄4 Teaspoon
  Mangoes 2 , peeled, seeded and diced
  Diced pineapple 2 Cup (32 tbs)
  Chopped green onion 2 Tablespoon
  Diced red bell pepper 1⁄4 Cup (4 tbs)
  Chopped cilantro 2 Tablespoon
  Lime juice 1 Tablespoon
  Juice 1⁄4 Cup (4 tbs) (Kagome Yellow Mango Orchard Juice)
  Salt To Taste
  Hot sauce 3 Dash
Directions

Combine all of the Tropical Fruit Salsa ingredients in a small bowl. You may make this up to one day ahead and chill.

Place all of the ingredients for the marinade in a food processor or blender and puree coarsely.

Pierce the chicken with a fork and rub the marinade in thoroughly. Let marinate one hour to overnight.

Cook the chicken over a hot grill 5-7 minutes to a side or until just cooked through. Serve with the Tropical Fruit Salsa.
